To bring AGAINST THE GRAIN to life, we sought a partner who shared our belief that tradition should continue to evolve. We found that in Kubuki Shuzo, an award-winning 18th-generation brewery in Niigata committed to connecting its hometown to the future.
Led by a master brewer recognised as Niigata's Best Toji in 2023, Kubuki continues to honour centuries of craftsmanship while embracing the future of sake.
Nestled between the mountains and the Sea of Japan, Kubuki brews using spring water drawn from Daideguchi Spring at the foot of the sacred Yoneyama and Ogamidake mountains—recognised among the “100 Exquisite Waters of the Heisei Era.” Every bottle reflects the purity of its surroundings and generations of brewing expertise.
